So, please correct me if I'm wrong.. but the new mac pro wont really be able to do any GPUGRID work because its not CUDA?

I'm about to get one of these 12 core/24 thread monsters for work and of course I'm gonna put it to good use. =)

Should I even bother with GPUGrid or just stick to other projects for that machine?

There is no GPUGRID app for Mac's.

Besides no Mac support there's also the issue of the new GPUs being AMDs, which can't run GPU-Grid. For them there's POEM (very limited amount of WUs), Milkyway (slow on the smallest FirePro but very good on the 2 higher end models), Einstein, Seti and maybe donate@home (although I think direct donations would make more sense than running this project - but the choice is yours, obvioulsy). There are also a few other math and encryption related projects, which I think don't make all that much sense (people will disagree here at least concerning PrimeGrid). And I have no idea which of these run on Macs.

Donate@Home doesn't have any work - the project was halted a few months back following the arrival of ASICs processors, which are basically designed to find bitcoins. This arrival left the GPU's non viable as BitCoin miners. The present value of bitcoins is extremely high, but finding them was the problem towards the end of the project.
